BUILT DIFFERENT, ALWAYS
Lacto fermented for punchy probiotic depth. That ferment brings tang, lightness and a wildly more-ish balance you won’t find in chilli-infused honeys. Small batch, never heat-treated, always alive.

Storage always in the pantry. If it crystallises, warm the jar gently in a water bath to liquify, or take the cap off and microwave for ten second bursts.
Salt gang is an Adelaide based company run by Lucy and Thomas, long term lovers of each other, good food, and hanging out a lot. What started in 2021 as a little market stall is now their full-time job, selling to restaurants and providores all around Australia.
